Boeree entered the final table as one of the chip leaders with 2.2 million chips but couldn’t overcome Hutchison heads-up.
Hutchison picked up £93,900 for topping the 427-player field in Edinburgh.
At one point the PokerStars Pro had Hutchison all-in with pocket kings against his ace-four but Hutchison managed to river a straight to stay alive.
Despite the tough loss, Boeree if off to a hot start in 2014 and already recorded her first cash in the PCA Main Event when she came 50th for $32,000.
Meanwhile Hutchison joins a fairly illustrious group as winner of UKIPT Edinburgh. Fintan Gavin and Nicolau Villa-Lobos are former champions in the event.
This year’s tournament drew plenty of notable poker players including Team PokerStars Online pro Mickey Petersen, Sam Grafton, David Vamplew, Vickey Coren and Dale Philip.
